  • Pumpkin seeds are rich in essential amino acids, essential fatty acid (linolenic acid) Chromium, Sodium, Potassium, Phosphorus, Iron, beta carotene and good amount of Magnesium, Zinc, Copper, Molybdenum, Selenium.
  • Protein content of pumpkin seeds ranged from 24.5 % to 36.0 %.
  • Pumpkin seed flours have been used as protein supplements in baked products.
